This naturally processed Papayo from Finca Zarza offers notes of maraschino cherry, violet, green toffee apple and dark chocolate.
Jhonatan and his brother are fourth-generation coffee growers, continuing a family tradition of coffee production and beekeeping. Driven by curiosity, Jhonatan explores experimental processing techniques to develop the character of each lot.
Papayo is a rare variety grown in Huila, Colombia, named for its elongated cherries, which resemble small papayas. For this lot, cherries undergo an initial 48-hour oxidation stage in 200-litre tanks to develop sweetness and fruit character. The tanks are then sealed for a further 120–150 hours of anaerobic fermentation. During this stage, fermentation liquid, known as mosto, is reintroduced to support even, consistent fermentation.
