Axil Coffee: How long have you guys been here for now?

Yellow Espresso: Eleven years.

Axil Coffee: Why Ballarat?

Yellow Espresso: I actually grew up here. We decided to move to Ballarat and we thought to ourselves: "Why don't we bring the things we love about Melbourne?"

This town needed avo smash, açai bowls and specialty coffee.
There really was an opportunity to bring all the things we loved.

When we lived in St. Kilda we'd see the Axil cups all around the neighbourhood so Axil Coffee were obviously the first brand we approached, and they were just so supportive from day one. It felt like it was meant to be.

Axil Coffee: You guys have been here for a long time and doing a really good job of what you're doing. What advice would you give to someone that's going to open a cafe or thinking about opening a cafe?

Yellow Espresso: You've got to be really hands-on. We like to make sure the coffee is consistent so that you come in and get a good coffee every time. Serve items on the menu that you actually enjoy - don't put dishes on their for the sake of it. Every dish on our menu is something that we like.
